Not all great spirits begin with a distillery. Some begin in back rooms and basements, in borrowed stills and forbidden experiments, pursued by law on one side and opportunity on the other.
The story of Aybrook & Mason is not merely the story of exceptional spirits, Arrack, Rum, Old Reserve, and the rarest expressions yet to be revealed. It is the chronicle of two nameless boys, born oceans apart in the late nineteenth century, whose lives were shaped by necessity, ingenuity, and an early mastery of the distiller’s art, long before either was legally permitted to taste a dram.
Raised without privilege, trained in herbal medicine and illicit craft, both learned to transform botanicals, sugar, and spirit into something people sought out, trusted, and returned for. Their early creations were not meant for acclaim. They were meant to survive.
Still in their teens, each fled the limits of his world, one from the streets of London, the other from the hills of Jamaica, carrying little more than hard-won knowledge and a taste for risk. Fate would bring them together in New York, where their shared talents, and shared disregard for convention, set them on a path that would span continents, cultures, and forgotten spirits.
This website is the beginning of that journey. Here, each place they passed through becomes a waypoint. Each liquor, a chapter. Each bottle, a fragment of a larger legend.
